This spicy pasta comes together quick but leaves a flavorful punch!
Preheat oven to 350 F. While cooking the pasta (according to the package directions), heat a skillet with canola oil on medium high heat. Once the skillet is heated, add the peppers and onions and cook for about 2 minutes. Add the sausage and cook until everything begins to char. Add the broccoli and cook for about a minute. Remove the sausage and veggies from the pan and set aside.
Pour the chicken stock into the pan and scrape the bottom of the pan as the stock heats up. Add the cream cheese block and stir until combined. Add the Cajun seasoning to your taste along with the salt and pepper. When the pasta is done, drain it.
Toss the pasta, veggies and sausage into the sauce and mix to combine. Pour the mixture into a 9×13 pan that has been sprayed with cooking spray. Top with cheddar and Parmesan cheese, sprinkle with additional Cajun seasoning if you wish. Put this into a 350 F oven for about 10 minutes or until the cheese has melted.
Top with additional Parmesan cheese and enjoy!
