This delicious sandwich will rival anything you get at a New York deli!
1. For the tarragon schmear, beat together all ingredients in a medium bowl until smooth; store refrigerated.
2. To make the sandwiches, spread a bit of the tarragon schmear on the cut side of each bagel. On the bottom half of each bagel, add the lox, red onion, tomato, lettuce, and a squeeze of lemon, if desired. Add the bagel top.
3. Serve.
