What do you do when you want buffalo wings but also need a more substantial meal? Make buffalo chicken sandwiches, of course. These are fantastic served with some baked sweet potato fries.
1. Mix the first three ingredients in a shallow dish and dredge the chicken making sure to coat well. Cover and place in refrigerator for up to an hour. Doing this step is crucial. It lets the flour mixture really bind to the chicken to make a nice breading.
2. When the hour has passed, preheat a skillet on the stove for frying the chicken. Add about a half an inch of oil.
3. In a separate skillet combine the butter, hot sauce and garlic powder and heat on low just to let the ingredients melt together. Mix this and keep warm.
4. Take chicken breasts and fry until golden brown and cooked through.
5. Drain the excess oil off the chicken breasts and place in the buffalo sauce skillet coating both sides and let sit.
6. Spread a bit of butter on the buns and grill to your liking.
7. To assemble the sandwiches, place a couple tablespoons of blue cheese dressing on the buns and layer the chicken, lettuce, tomato and avocado.
8. Enjoy!

I am a native of Buffalo, NY- home of the Chix Sandwich. On behalf of all Buffalonians (and all that is holy in the name of making spicy chicken) I would like to say: Thank you for this recipe!! It is exactly the way I make it, right down to the Frank’s, which most people try to substitute. Tobasco’s just not the same.

I made these for dinner over the weekend and they ROCK!!! My husband said that it was just as good as the sandwich that he orders at Red Robin! Then I figured that what we pay for 1 sandwich there, I fed my entire family of 5! This recipe is a keeper! The only thing I changed was the bleu cheese dressing for my kids, they don’t like it….so for them it was ranch. But my hubby and I used bleu and it was DEE-LISH-US!!!

Sounds great! I make a very similar wrap with diced chicken, buffalo sauce and romaine lettuce.
