Description

A tasty way to use sweet heirloom tomatoes or an abundance from the garden. This makes a really good lunch or a quick dinner.

Ingredients

  • 1 loaf Crusty Bread
  • 1 pound Tomatoes
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 6 ounces, weight Goat Cheese
  • 2 Tablespoons Minced Fresh Basil
  • 2 Tablespoons Mayonnaise
  • 1 dash Garlic Powder Or Garlic Salt Or Roasted Garlic (optional)
  • Salt And Pepper, to taste
  • ¼ cups Shredded Parmesan

Preparation

1. Slice bread into 1/2 inch slices; toast lightly under broiler. You can also use a baguette – cut in half length-wise and then cut into 4 inch sections.

2. Cut tomatoes into thick slices. Mix olive oil and balsamic vinegar in a large bowl; marinate tomato slices in mixture for a few minutes.

3. In a small bowl, microwave goat cheese for 10 seconds to soften. Add basil, mayo, garlic powder/salt (or roasted garlic, if you have some!) and mix to combine. Spread over toasted bread.

4. Place tomatoes in a single layer on prepared bread. Salt and pepper to taste. Sprinkle parmesan cheese on top.

5. Broil for 7-10 minutes or until cheese is browned and tomatoes are softened.

This was delicious! The tartness of the vinegar and goat cheese with the sweetness of the tomatoes was a perfect combination! It was really quick to make and tasted like it took a lot of effort.
