This quick and easy dish is healthy, simple and perfect for a lunch or light dinner.
Boil pasta following package directions and be sure to season your water liberally with salt.
Meanwhile heat butter or olive oil in a skillet over medium heat. Add garlic and onion and saute for 3-4 minutes or until fragrant. Take off of the heat and set aside.
When it’s done, drain the pasta, saving a tablespoon of the pasta water. Return pasta to pot. Into the pot with the pasta, add the tuna (tuna does not have to be drained as it pre-packaged), prepared pesto and the melted butter mixture. Toss to stir. If the mixture seems dry, add the reserved pasta water. If you’ve so chosen, add the cherry tomatoes and artichoke hearts at the end and mix gently. Add salt and pepper to taste. Top with Parmesan cheese for serving.
