I love this sauce; it’s a staple in my kitchen because pasta is at the top of my list when it comes to comfort foods. This is the base for my lasagna but I triple it and omit the cream.
Heat the butter and bacon over low heat. Cook until the bacon renders some fat, about 3 minutes.
Add the onion and cook until soft, about 3 minutes longer. Add garlic and cook for 1 minute; do not brown.
Stir in the beef and cook just until no longer pink. Add the stock, wine, tomato paste, tomatoes and seasonings. Simmer, stirring occasionally until the sauce thickens, about 30 minutes.
Stir in the cream and remove from heat.
Serve over any pasta and top with freshly shaved parmesan cheese.
