In Spain, bocadillos (or sandwiches) are sold everywhere and with many different varieties, more than we have in the States. This one is crusty and melty from the toaster oven, and the unexpected combo of goat cheese, oregano, and honey is immediately intriguing and fulfilling. Give it a whirl!
Slice the roll in half. Spread one half with goat cheese (if you’d like more, please add it!). Pat the tomato slices dry, then layer over the goat cheese.
Wash and dry the oregano, and pull the leaves off the stems. Sprinkle over as much as you would like. Be liberal here, the oregano makes the sandwich! Then drizzle this half with honey—again, be liberal! Honey’s an important flavor here.
On the other haf of the roll, brush a bit of olive oil (about 1/2 tablespoon or so). Put both halves together and wrap tightly in tin foil. Place in a 375ºF toaster oven for about 10 minutes.
Allow to cool for a few seconds, unwrap, and enjoy!
