The best meal of summer…on a pizza!
Fry or bake your bacon over medium heat until just crisp. Remove husks from corn and grill them over medium heat until lightly charred on all sides. Let cool and then slice the corn off of the cob.
Prepare your crust, making it into two small-sized pizzas. Brush one side with olive oil and place that side on a hot grill. Cook until the bottom is slightly crisp and pizza is stiff and easy to flip over with tongs. Brush the top side with oil and then flip it.
Immediately layer on the cheese and top that with the bacon slices that have been torn in half or thirds, tomato slices and grilled corn kernels. Close the grill lid and let the pizzas cook until bottom crust is done and cheese is melted.
Remove pizza from heat and top with chopped romaine lettuce and enjoy!
