This BLT with Chipotle Mayonnaise is as good as it is simple.
For the Chipotle Mayo:
Combine all of the ingredients in a small mixing bowl and set aside.
For the BLT sandwich assembly:
Cook bacon in a skillet over medium-high heat until crisp, but not burnt. Once cooked, drain bacon on plate lined with paper towel and set aside.
Lightly toast sourdough slices in broiler or toaster.
Spread Chipotle Mayo over the insides of both slices of bread. Layer lettuce, then tomato slices (2 per sandwich) and finally bacon slices on top of bread. Place remaining slice of sourdough on top to make sandwich.
