Bleu cheese sauce smothers a bed of pasta! Yum!
Boil a pot of water for the spaghetti. When water boils add the noodles. Cook spaghetti according to package instructions for al dente. Reserve 1 cup of the pasta water then drain the noodles in a colander and set aside.
In a large skillet over medium heat, melt 4 tablespoons of butter. Then add flour, stir and cook the flour for a minute or two. Then slowly add milk, stirring as you go. Season with salt. Whisk sauce into a smooth consistency.
Add crumbled blue cheese and keep stirring until sauce is smooth. Add cooked pasta with the 1 cup of starchy water. Add the extra 2 tablespoons of butter and the Buffalo sauce. Mix everything together, place top on pan and turn heat to low.
Let it simmer for about 5 minutes, or until pasta is finished. Plate it and top with fresh parsley.
