This recipe was created by my Daddy years ago and is a much requested favorite at family reunions, church potlucks, holidays and tailgate parties!
In a heavy stock pot, cook ground beef in bacon grease until very done (when you think you’ve cooked it long enough, cook it some more). Add smoked sausage, onion, greens onions, bell pepper, and celery. Cook until onions start to become transparent. Stir in garlic and parsley.
Add chicken stock and water to meat and vegetable mixture, and bring to a boil. Add rice and seasonings. Bring back to a boil, stir once, then reduce heat to simmer. Cover and cook until rice is done and liquid is absorbed.
Note: it is extremely important to use a a heavy, thick bottomed pot for this recipe so the rice will not stick. Stir once during cooking time to avoid scorching.

Really good! Substituted dry parsley (1/4c) for fresh, a home made cajun spice, and 1/2 c regular diced onion for green onions. I used Jasmine rice.
Served with steamed green beans and raw carrots.

Very yummy! Tried it tonight, and added broccoli too. Will definitely have it again!

Everybody loved this! The youngest children said “mmm” until the spice kicked in, then could not finish it. The adults and teenages couldn’t get enough.
Easy too! Served with broccoli for a complete meal.

Made this for Game Day! Georgia vs. Florida. Go Dawgs!! Very tasty. I did not have Tony Chachere’s Cajun Seasoning and found that the Cajun Seasoning I used was a bit salty. Should have tasted it first. Had to add a liitle more liquid rice was el ‘dante. It was really good though! Use leftovers in flour tortilla’s with all the fixins’! Tacos? Umm!! Thanks
