Thought it was Spring for a moment, but we still have some chilly, drizzly weather to contend with. So here’s some great comfort food!
1. Preheat your oven to 350⁰F.
2. Sprinkle the pork pieces with salt and pepper.
3. Heat the olive oil in a Dutch oven over medium high heat and brown the pork pieces well, stirring to brown all sides.
4. Evenly distribute the onions over the meat. Top with the brown sugar and pour the cider vinegar over the whole thing. Place in the oven for about 2 hours, or until the meat is very tender.
5. Remove the top of the Dutch oven. Stir in the BBQ sauce and bake uncovered for ten minutes.
6. While the BBQ sauce is warming, in a large saucepan, heat 4 quarts water and 1 tablespoon salt over high heat. When the water starts to boil, add the noodles and cook them for about 7 minutes or until tender. Drain. Mix with the butter.
7. Serve in a large bowl with the pork on top of the noodles.
Chef Lynn’s tips:
1. This recipe also works great in a pressure cooker. If you have a browning function, use it and then cook the pork for 50 minutes under high pressure. Release the pressure; stir in the BBQ sauce and cook under low pressure for another 5 minutes. This cuts your time in half!
2. This recipe serves 4 to 6, but you had better plan on four because I assure you that everyone will want seconds!
