I made the curry using ingredients that I had on hand and my son loved it. Serving this dish over rice noodles makes it gluten-free. You can also serve it over rice or simple with some sautéed vegetables. You can adjust the spices to your liking. Some like it hot, some like it mild.
Cut beef in thin slices (I used Black Angus). In a nonstick skillet, add oil and sauté beef over medium-high heat for 3–4 minutes. Add red onions, garlic, sauté for about 4 minutes. Add fresh ginger, sambal oelek, curry powder; cook, stirring, until fragrant, about 45 seconds.
Add soy sauce, lime juice and peanuts. Sauté another 30 seconds. Server over rice noodles.

You can find sambal oelek in the speciality section at the grocery store. If you can’t find it maybe use: sriracha
