Description

Deliciously seasoned, we enjoy ours spicy!

Ingredients

  • 4 pounds Chuck Roast
  • 2 cloves Garlic, Minced
  • 4 ounces, weight Chopped Green Chiles
  • Cumin Salt Oregano And Chili Powder To Taste

Preparation

Preheat your oven to 300 degrees.

Place your Chuck Roast on a piece of tinfoil large enough to fully enclose it with a bit of room all around.

Mix the garlic, green chiles, cumin, chili powder, salt, and oregano together in a small bowl.

Rub the mix over the roast, making sure you completely cover it, and wrap the tinfoil up around the roast.

Place the roast package in a roasting dish and place it in the oven for 3 1/2 to 4hours.

Remove your roast from the oven and pull it apart wit two forks, Or if you’d rather use your hands (but please remember the chiles you used in the seasoning)

Serve however you’d like, this recipe is great for making roughly six heaping tacos!

I made these today for dinner…I added a Jalapeno(minced) to the rub, and cooked it for 6 hours….My family LOVED it!!

I first made this recipe right after it was added, and since then it has become my favorite thing to do with a roast! It felt like it was one of the hottest months on record and I couldn’t face turning on my oven and heating up the entire house. I dug out a roast from the freezer, probably hidden away since the cold months and made the foil pack as instructed, in my biggest roasting pan. I put it into my oven at about midnight, set at a lower temperature than called for and left it there overnight. I took it out in the morning and pulled it apart with forks, then because I couldn’t wait- (and because it smelled so great) spread sour cream onto a big tortilla, sprinkled it with garlic powder and some cayenne, sliced up three different colored bell peppers and put a few skinny pieces of each onto the center of the tortilla then spread out some of the pulled carnitas meat on top, rolled it up and ate it right there! It’s still a favorite recipe any time of the year and I like Dax Phillips’ Orange Chipotle Pork Tacos the same way… But it all started with THIS recipe!
