A great way to utilize leftovers and languishing veggies – wrap them into pizza dough, throw in some cheese and enjoy!
1. Make pizza dough, courtesy of PWCooks – or thaw your store bought frozen dough.
2. Preheat oven to 395 degrees (F).
3. Saute peppers and onions in 2 Tablespoons olive oil over medium-high heat until soft and browned.
4. Assemble calzones: Split dough into 5 sections. Roll out pizza dough into large circles. Top each dough (on one half of the dough) with onions, peppers, brisket, shredded cheddar, and one slice of Swiss cheese.
5. Fold calzone over onto itself and seal the edges. Prick the top all over with fork.
6. Bake for 20-25 minutes or until top is browned and dough is cooked through.
