A hearty bean medley with tasty chunks of bacon slow cooked in your crock pot for a filling and tasty meal.
Cook bacon, crumble and put into your crock pot.
Saute chopped onions in bacon fat until translucent. Use a slotted spoon to remove onions from the cooking pan. Transfer them to your crockpot. (You should have a couple of tablespoons of bacon fat sticking to the onions; that’s a good thing!)
Add the beans, the chicken stock and the water. Set crock pot on low and cook for about 4 hours. During the last hour of cooking, add the sliced carrots and continue cooking until carrots and beans are tender.
Season to taste. Serve.
