Hearty and tasty to warm you on these cold nights. The original recipe used beef but we are trying to incorporate more beans into our diet. So I adapted the recipe and now it is a great vegetarian one dish meal.
Heat oven to 400° F.
In a 10 inch oven proof skillet heat oil over medium heat and saute onions and garlic for about 3 minutes then add bell pepper and celery and saute for another 5 minutes. Add remaining bean ingredients and simmer while preparing biscuits. Add a little water if needed.
In a medium bowl, combine flour, baking powder, and salt; stir to blend. Using pastry blender or fork, cut in margarine until it’s the consistency of coarse meal. Add milk; stir with fork just until a soft dough forms.
Turn dough onto floured surface; sprinkle lightly with a bit of flour. Knead gently 10 to 12 times until the dough is no longer sticky. Roll or press to 1/2 inch thickness; then cut with a 2 inch biscuit cutter. Place a cheese cube in the center of each biscuit. Fold dough over cheese; seal well. Arrange biscuits over the hot bean mixture. Bake at 400°F for 20 to 25 minutes or until biscuits are a deep golden brown. Serve immediately.
