Simple and easy. A family favorite at my house. Great on tortillas, mashed potatoes or a sandwich.
Note: this makes a lot, but it is very easy to cut down for a family dinner.
Rinse and dry roast. Place in the bottom of a slow cooker, top with onion, garlic, pepper and BBQ sauce. Put the lid on and set on low for 10 hours.
About 45 minutes prior to serving, remove roast from pan and set aside. Pour most of remaining sauce in a saucepan and boil on high heat. While the sauce is reducing, shred pork with two forks. The roast should practically fall apart. When done, put back into the cooker and add the sauce that has been reduced. Stir around until well combined. Leave on low until ready to serve.
