A light yummy pizza using simple ingredients.
Preheat oven to 425ºF. If you are using a pizza stone, place it in the oven while preheating.
For the squash, in a cast iron skillet over medium heat, add olive oil, minced garlic and butternut squash. Saute until squash is tender/firm, about 10 minutes. You may need to add a little water.
For the pizza, stretch pizza dough out. Remove stone from oven, and place pizza dough on stone or a baking pan. Spread garlic onto dough. Spread on BBQ sauce next. Now layer on the squash mixture and sliced onions. Top with half of the mozzarella and Parmesan cheese.
Bake 15 minutes then remove it from the oven.
Sprinkle kale over entire pizza and top with remaining cheese. Bake 15-20 minutes more until dough is golden brown and crispy on the bottom.
