It’s like comfort food, but fancy! The chicken cooks in the cream sauce, so it’s very moist.
1. Pound chicken flat. Coat in milk, then coat with breadcrumbs. Saute both sides of chicken in butter in a large skillet until done, about 4 to 5 minutes per side.
2. Add chicken broth to the skillet and bring to a boil. Stir in whipping cream and boil for an additional minute. Reduce heat. Add parmesan cheese, basil and pepper and cook for another minute or until heated through.
3. Serve over pasta.

the sauce is very yummy! I don’t think I’d do the chicken in the butter again though.
Overall the dish is excellent!

We made this tonight! It was delicious! I took the cooked chicken out and put it back in the sauce after it was done to simmer for a minute. Still not crispy, but I liked it that way! Yum!

Oh my goodness this is good! I made it for dinner last night and we loved it. I actually, and I’m not making this up, had to clean the pan with my finger and lick it clean before I put it in the soapy water!!
I do have one question…are you supposed to take the chicken breasts out of the pan before adding the broth, cream, etc? Or leave them in? I left them in as it didn’t say, but I noticed the breading doesn’t stay as crisp then…so just wondering. DELICIOUS!!! Thanks for a great recipe!

I have made something very similar to this. I sautee’ bacon, garlic and onion together and then add cubed chicken breasts in the mixture. I also add about 1-2 tablespoons of soy sauce, which just takes it up another notch! The whipped cream with the soy sauce and the basil, is pure heaven!
