This one is our home style, comfort food dish. And we eat it every week. It’s chicken mince in a dark salty, spicy gravy, with a hint of fresh basil and lots of fresh crunchy greens.
Cut off the hard ends of the asparagus and cut the asparagus into half.
Add cooking oil to a hot wok. Add minced garlic and stir fry for 20 seconds.
Add the asparagus. Stir for a minute until it starts to change colours.
Add the minced chicken and stir fry quickly.
Add the oyster sauce, dark soy sauce and Shaoxing Huatiao wine.
Stir-fry evenly. And then add 1 to 2 teaspoons of sugar to taste.
Toss in the basil leaves. Stir fry for a good minute until the vegetables are cooked. Then add in sliced chili.
If the vegetables emit too much water and the gravy is runny, then mix 2 to 3 teaspoons of cornflour with twice the amount of water and add to the sauce, stirring quickly. This will thicken the gravy.
Serve with rice.

This is an awesome recipe! It tasted just like the restaurant. I used fresh green beans instead of asparagus. My husband and mother in law were impressed and it was simple to make! I made it a little too spicy for my toddler with two Serrano chili peppers, but it was very tasty!

Minced chicken is the same as ground, its called mince meat in europe.

This might be a dumb question, but is minced chicken the same as ground chicken?
