This is a friend’s recipe that I crave regularly. It’s SO easy and delicious alone, on a sandwich, over salad, or stuffed into endless other recipes.
1. In a pot large enough to hold all the chicken, melt the butter. Add vinegar, red pepper flakes, and sugar. Bring to a boil and combine so all the sugar melts. Reduce to medium-low heat.
2. Rinse chicken breasts, pat dry and add to the vinegar. Be sure there is enough liquid to almost completely submerge the chicken.
3. Cover and let slowly simmer for 45 minutes to allow the vinegar/sugar/butter to absorb into the chicken. You can tell it’s done when the meat is falling off the bone.
This recipe can also be achieved in a slow cooker on medium heat.
I love to serve this as a main dish alongside “comfort food” sides, or on a roll with provolone cheese.

This was amazing! Tangy and delicious. I added two tablespoons of Dijon and substituted one cup of the sugar with brown sugar and served with roasted sweet potato home fries with rosemary, olive oil and sea salt.
