Description

A warm and hearty baked pasta for busy weeknights!

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ pounds Ground Turkey
  • 1 clove Garlic, Minced
  • 1 teaspoon Dried Italian Seasoning
  • 2 cups Tomato Sauce
  • 1 cup Fresh Spinach, Chopped
  • 9 ounces, weight Fresh Cheese Tortellini
  • ½ cups Mozzarella Cheese, Shredded
  • ¼ cups Parmesan Cheese, Grated

Preparation

Preheat oven to 375 F.

Heat the olive oil in a large pan over medium heat. Add the ground turkey, breaking it up with a spatula or wooden spoon as it cooks. Add the minced garlic and Italian seasoning to the turkey. Cook until the ground turkey is done, about 5 minutes, stirring occasionally. Add the sauce to the ground turkey and stir to combine. Add in the spinach and stir until it starts to wilt.

Turn off the heat and add the uncooked tortellini to the sauce and stir to combine. Pour the pasta and sauce into a baking dish. I used a large oval baker but an 8×8 or 9×9 should be fine as well.

Top with the mozzarella and Parmesan cheeses. Cover the dish with foil and bake at 375 F for about 15 minutes. Remove the foil and continue to bake for another 5-10 minutes, or until the cheese is melted. Remove from oven. Let it stand a few minutes before serving.

Notes: This recipe calls for ground turkey, but you could easily substitute ground beef. To make it even easier, skip the meat and just combine the tortellini in the baking dish with sauce and the spinach and bake.
