Description

Fast and easy!

Ingredients

  • 1 whole Onion, Sliced
  • 4 whole Tilapia Fillets, Defrosted If Frozen
  • Olive Oil
  • Oregano, to taste
  • Salt And Pepper, to taste
  • 2 whole Tomatoes, Sliced

Preparation

Preheat oven to 425F.

Place onion slices in a single layer on a lightly greased baking sheet.

Rub a small amount of olive oil all over the tilapia. Place on the baking sheet on top of the onions. Season to taste with oregano, salt, and pepper.

Top with sliced tomatoes. Bake for 12-15 minutes or until fish is opaque and flakes easily when pierced with a fork.

Serve with rice.

Sidenote: I only had homecanned tomatoes, and it was so flavorful, I loved all the flavors together!

I’m going to go ahead and write a review, even though I tampered with the recipe to incorporate what I had on hand. I used flounder fillets rather than tilapia (I think any mild, white fish would be good here) and fresh basil rather than oregano. The results? Yum! I loved the idea of baking the fish on top of the onion slices! I served it over plain, old, buttered brown rice, and we all gulped it right down. This was really tasty, easy, extremely quick, and healthy to boot–it would be hard to ask for more than that. Thanks, whigkid!

Really tasty, fresh summer dinner. We’re heading out of town on vacation so I’m trying to make dinner without another trip to the grocery store. I had some tilapia in the freezer and was thrilled to find this recipe because I had a few tomatoes straight from the vine and there are always some onions hiding in the bottom of the pantry. I have to admit that I was quite pleasantly surprised! Tasted so delightful that I practically licked my plate. I served it with some saffron rice and the colors on my plate just sang! My only suggestion would be to season the fish directly instead of seasoning after the tomatoes went on top. But, all in all, great recipe. We’ll eat it again soon.
