This is a quick and easy meal that’s very tasty.
1. Brown bacon, drain on a paper towel, and dice when cool.
2. Cut a small, circular opening on top of each squash and remove seeds.
3. Wash squash.
4. Saute onion in the butter until translucent.
5. Add diced apple and saute until apples are slightly tender.
6. Drizzle with honey and cook another minute before removing from heat.
7. Mix apple-onion mixture with bacon in a bowl. Season with salt and pepper to taste.
8. Stuff the squashes and replace the tops. Place in a 13 x 9 pan.
9. Pour about 3/4 cup water in bottom of pan and cover pan with tin foil. Bake 1 hour at 400 degrees or until done. You can remove the tin foil the last 15 minutes of baking.
