Great for a family dinner or a group. Looks elegant with very little work.
Rinse fish with cool water and pat dry. Place in the bottom of a baking dish.
If you are using a whole fish, then open cavity and put a heaping handful of brown sugar in and rub around, then layer onion and lemon inside. Rub the remaining amount of brown sugar on the outside of the fish then cover with foil and bake at 400 degrees for 30 minutes.
If you are using a fillet, then put the skin side down and rub sugar on flesh, then layer the onion and lemon on top. Cover and bake at 400 degrees for 30 minutes.
Note: if you are using a smaller piece of fish, then cut down the brown sugar.
