Description

This can be taken in a crock pot for a lunch potluck or made as a side dish for a family get-together.

Ingredients

  • 1 cup Large Elbow Macaroni (uncooked)
  • 1 can Creamed Corn (16 Oz)
  • 1 can Whole Kernel Corn (16 Oz. Undrained)
  • 1 stick Butter
  • 1 cup Velveeta Brand Cheese, Cut Into Cubes

Preparation

Place all ingredients into a 2.5-quart greased casserole dish. Stir. Bake in a 350 degree F oven for 1 hour. Cover for the first 30 minutes and uncover for the last 30 minutes.

I have put this in the crock pot on low when arriving to work in the morning, and it has been ready for a potluck at noon.

pasta goes in uncooked. The liquid from the corn and the butter will be enough to cook the pasta.

Do you boil your pasta before you put it in the slow cooker, or does it go in raw?

Loved this! I don’t usually stray much from a recipe the first time I make it, but I didn’t have everything on hand, so I improvised a bit and it turned out great!

I used medium egg noodles and frozen corn because that’s what I had on hand. I also added leftover pork loin roast that I diced to make it a main dish rather than a side. I also didn’t use a whole stick of butter, just because… no reason other than it just seemed like a lot of butter.

This will definitely go in to my rotation for those nights I need something quick and flexible that I know my guys will eat!
