This sandwich combines crispy bacon, tangy, sweet, fresh watermelon, and peppery arugula.
Place the block of watermelon, with no rind, in a medium bowl, and pour the lime juice over the top. Let sit and marinate. I like to let it marinate for about 1 hour.
Meanwhile, place the bacon in a nonstick skillet over high heat. Turning often, cook the bacon until the fat begins to pop, about 2 minutes. Turn the heat down to medium and cook, still turning often, until the fat has rendered from the bacon. Finally, turn the heat up to high once again and cook the bacon just until it reaches the color you like. Place the strips of bacon on a plate covered with a double layer of paper towels and let drain.
Place the watermelon, drained bacon, and arugula between the two slices of bread. Enjoy!
