Description

Wow, that is one long title for this tasty sandwich. To end our month of all-American recipes I decided to make one of my most favorite sandwiches: the BLT with a definite Southern twist. I replaced the red tomato with a fried green one and it was delicious!

Ingredients

  • 2 Tablespoons Oil
  • 1 whole Medium Green Tomato, Sliced Into 8 Slices
  • ½ cups Flour
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 8 strips Bacon, Cooked Crisp
  • 8 slices Bread
  • 4 Tablespoons Mayonnaise
  • 4 whole Lettuce Leaves

Preparation

Heat oil over medium heat until oil is hot. Slice the tomato in slices that are thin enough to yield 6-8 slices. Pat dry with a paper towel. In a pie plate, mix the flour and salt and pepper. Dredge the tomato slices in the flour so that both sides are liberally covered. Place the tomato slices in the pan and brown until crispy on both sides. While you are cooking the tomatoes, cook the bacon slices in either the microwave or in another pan until they are crispy. Toast your bread.

To assemble your sandwich, place the ingredients in this order: Take the mayonnaise and divide it into 1-tablespoon servings and spread on 4 slices of bread. Place 1 lettuce leaf, 2 fried green tomato slices, and 2 slices of bacon on those slices of bread. Top with the remaining slices of bread. Now dig in and enjoy.

Makes 4 sandwiches.
