This avocado shrimp wrap is light, healthy, and simply delicious!
Rinse shrimp under cool water clean and devein. Boil in water over medium heat until pinkish in color. When cooked, place in a bowl with ice water to cool. Set aside.
In another small mixing bowl, add olive oil, avocado, lemon zest, ranch dressing, and cilantro. Add cooled shrimp and toss to coat.
Place wraps on a plate and add baby spinach. Top with shrimp and avocado mixture. Serve with a side salad or chips!
