This is a great easy way to cook tenderloin. It has the perfect amount of pork-to-sweetness ratio.
1. Preheat the oven to 425 degrees.
2. Combine preserves, mustard, and rosemary in a bowl. Stir well and set aside.
3. Spray a baking sheet with nonstick spray. Then salt and pepper the tenderloin and place it on the sheet. Using a pastry brush, brush the apricot mixture on the tenderloin, making sure to coat the entire piece of pork. Use all but about a 1/4 of the mixture.
4. Roast for 40-45 minutes at 425 degrees. Halfway through, brush the remaining mixture on the pork.
5. Remove from the oven. Let it stand for 5 minutes before cutting diagonally.
6. Mmm … enjoy. =)

I did not have any apricot preserves, but i did already have some homemade Plum Preserves (made by House of Webster, Inc. in Rogers, AR.) (given to me by my mother-in-law) in my pantry.
I also had some Hickory Farms Cranberry Mustard, a cranberry, apple & honey blend, in my frig, along with some ground mustard in my spice cabinet.
So, I followed this recipe, substituting the ingredients I already had at home, (which I think is resourceful and fun!) and this tenderloin was also delicious.! I made bacon wrapped green bean bundles and canned Pillsbury crescent rolls, both easy, to complete this yummy hot meal, epecially with my 14 year old son in mind!

This was delicious and so easy to make. A big hit with the kiddos and the hubby, too.
Mine required a little longer to cook, but my oven is special.
