Hoisin sauce is one of my favorite ingredients to use in cooking, and I am always playing around with sauces to make the more economical meat choices more tasty! This sauce would work with any cuts of chicken, as well as pork chops. There is usually a lot of sauce left over but it freezes well to use as a sauce for meat on the grill.
Rinse chicken and pat dry. Brown in a bit of oil to crisp up the skin a bit, then transfer to a big enough baking dish. Sprinkle with the salt and pepper.
In a saucepan, heat together the apricot preserves, hoisin sauce, tomato sauce and butter until just warmed through and saucy.
Carefully spoon the sauce over the chicken, being careful not to knock off the seasonings. Cover tightly with foil and bake at 400 F for 30 minutes, then reduce heat to 375 F and bake an additional 30 minutes. Uncover and give it a stir and spoon sauce over chicken, then let it bake another 10-15 minutes. Serve over rice.
