An apple cheddar bacon grilled cheese sandwich is the ultimate in fall comfort! Serve it with a salad or soup for a simple and fast lunch or dinner.
For quicker prep, cook bacon in the microwave. Line a plate with paper towel and place bacon slices on it. Put another paper towel on top of the bacon and microwave for about 3 minutes. Set aside. Cooking it in a frying pan would also work and would be easier if making more than one sandwich.
Preheat an electric nonstick griddle to 300ºF or a nonstick griddle pan over medium high heat. Assemble sandwich by layering 1 slice of the cheddar, sliced apple, bacon, and then the last slice of cheddar. Close it with the second slice of bread.
Grease the griddle liberally with butter and brown the sandwich on the first side for 2 minutes or so. Press it down as it cooks so that it adheres together. Flip it over to brown on the other side for another 2 minutes or so. Cut in half and serve immediately!
