I know they sound weird, but it is just amazing how delicious these chicken breast are – and on top of that they are ridiculously simple and quick to make. They are a major favorite in our house.
Preheat oven to 400 degrees.
Pound the breasts lightly to thin them a bit if desired and place in a baking pan or dish.
Mix mayo and Parmesan (use the cheap stuff for this, no need to waste the good shredded stuff) and spread on top of the chicken breasts, coating them evenly.
Sprinkle bread crumbs on top to cover mayo. The 1/2 cup is an approximate measure – I just do this by eye.
Place pan in oven and bake for 20 minutes. The chicken will be thoroughly cooked but will be tender and juicy.

I have a similar recipe, drain a can of artichokes and chop fine, then add them to the mayo.

We have just had this for dinner (sort of). I added a few more ingredients, namely Spring Onion, a tablespoon of Peri Peri Sauce and a couple of finely chopped sundried tomatoes. Yum. Thanks Hootie.
