Mini pizzas with pesto sauce, chicken, and pine nuts. Great to make for beginners and kids, but tastes good enough to please seasoned cooks. So easy and tasty! Thanks to my best friend Rochelle for showing me this recipe.
1. Spread 1 tablespoon of pesto on each pita round.
2. Place pitas on a baking sheet and top with chicken, shredded mozzarella, and pine nuts (in that order).
3. Broil in the oven for 5 minutes, or until pine nuts are lightly toasted and cheese is melted. Watch that the pine nuts don’t burn. Enjoy!
