Description

Simple, tasty raw cookies made with creamy coconut butter, sweetened with dates and studded with vegan mini chocolate chips. The perfect re-charge snack!

Ingredients

  • ½ cups Soft, Pitted, Medjool Dates
  • ½ cups Slightly Melted Coconut Butter
  • 1 cup Unsweetened Shredded Coconut
  • ½ teaspoons Pure Vanilla Extract
  • 1 pinch Salt
  • ⅓ cups Vegan Mini Chocolate Chips

Preparation

Place the dates in a large food processor and puree until a ball forms. Add the coconut butter, coconut, vanilla, and salt and puree again until a crumbly, sticky mixture begins to form. Fold in the chocolate chips.

Scoop dough using a small cookie scoop, or your hands, to roll the dough into bite-sized balls. Store the cookies in and airtight container in the refrigerator to set. Devour.
