Description

Absolutely perfect for summer. This sweet treat is on the light side and can be made in 30 minutes or less! It’s especially delicious cold!

Ingredients

  • 1 Tablespoon Melted Butter (or Nonstick Spray), To Grease The Pan
  • 1 package French Vanilla Cake Mix (1-18.25 Oz. Box)
  • 1 cup Cold Water
  • 2 whole Eggs
  • ¼ cups Canola Oil
  • ½ cups Light Sour Cream
  • 2 whole Limes, Juiced And Zested
  • 8 ounces, weight Light Cream Cheese, Softened (1 Package)
  • ¾ cups White Chocolate Chips, Melted
  • ½ cups Powdered Sugar
  • ¼ teaspoons Vanilla Extract

Preparation

Preheat oven to 350 degrees. Grease a sheet pan with 1 tablespoon melted butter or non stick cooking spray. Set aside. In large bowl, combine cake mix, water, eggs, oil, sour cream and lime juice and zest together until just mixed. Pour into prepared pan and smooth. Bake 12-15 minutes. Remove from the oven and cool.

For the frosting, whip cream cheese, melted white chocolate chips, powdered sugar and vanilla together until well combined and smooth. Scrape edges of the bowl and whip again 1-2 minutes. Frost the top of the cake and refrigerate until ready to serve.

I made this for a party and it was great! It really tasted like lime. I added just one drop of green food coloring for a perfect subtle lime tint. If I did it again I’d make 1.5 times as much frosting, because it was a bit thin and I like it to be generous. But anyway– thanks for a recipe that’s perfect if you’re craving lime. :)

I made this for mother’s day brunch and just felt it was lacking something. I think maybe a buttercream frosting might be better…not sure. It wasn’t bad, just didn’t knock anyone’s socks off.

I’m a newbie and wrote in a comment what I should have written in the review. So to repeat, I made this for a party and it was great. I used two 8″ round pans to make a layer cake out of it, and that worked fine– I just lengthened the cooking time till the layers were done. I added a drop of green food color which was just right, and if I did it again I’d make 1.5 times as much frosting because I had to spread it on the thin side. I also decorated with long curly pieces of lime peel, which made it pretty. The thing that makes this recipe great is that it really does taste a lot like lime. Also, the white chocolate frosting is a perfect complement for the cake.
