I made this for mother’s day brunch and just felt it was lacking something. I think maybe a buttercream frosting might be better…not sure. It wasn’t bad, just didn’t knock anyone’s socks off.

I’m a newbie and wrote in a comment what I should have written in the review. So to repeat, I made this for a party and it was great. I used two 8″ round pans to make a layer cake out of it, and that worked fine– I just lengthened the cooking time till the layers were done. I added a drop of green food color which was just right, and if I did it again I’d make 1.5 times as much frosting because I had to spread it on the thin side. I also decorated with long curly pieces of lime peel, which made it pretty. The thing that makes this recipe great is that it really does taste a lot like lime. Also, the white chocolate frosting is a perfect complement for the cake.

I made this for a party and it was great! It really tasted like lime. I added just one drop of green food coloring for a perfect subtle lime tint. If I did it again I’d make 1.5 times as much frosting, because it was a bit thin and I like it to be generous. But anyway– thanks for a recipe that’s perfect if you’re craving lime.
