Description

Easy and chewy Chocolate Chip Oatmeal Cookies.

Ingredients

  • 1-½ cup Brown Sugar
  • 2 sticks Unsalted Butter, Room Temperature
  • 1 teaspoon Vanilla Extract
  • 1 whole Egg
  • 2 cups Quick Cooking Oats
  • 1 teaspoon Cinnamon
  • 1 teaspoon Espresso Powder
  • 1-½ cup Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 2 cups Chocolate Chips

Preparation

Preheat oven 350ºF.

1. In a large bowl, beat the brown sugar and butter until creamy. Stir in the vanilla extract and egg until fluffy. Stir in oats, cinnamon, espresso powder, flour, baking soda, and salt until well blended. Lastly, stir in chocolate chips.

2. On a well sprayed or greased backing sheet, drop cookie dough 2 inches apart and bake for 9-11 minutes. When finished baking, place on cooling rack.

These were so good!! I have to confess, I didn’t follow the recipe exactly because I didn’t have any espresso powder. I searched high and low and couldn’t even come up with any instant coffee in the house. I was so looking forward to trying that — I can only imagine how awesome they would have been! To help make up for the disappointment I decided to add walnuts and they turned out great!

These were delicious! I did add a tablespoon of espresso powder instead of a teaspoon, as my hubby is a devoted fan of it. Will definitely make again, much more interesting than regular chocolate chip cookies.
