Description

Cliche as these Christmas babies might appear, they are truly, truly delicious and very fun to make with children. The rich chocolate flavor of the cookie resembles my chocolate sheet cake, but once you add the white chocolate and peppermint candy, it becomes the perfect Christmastime cookie.

Ingredients

  • 2 sticks Salted Butter, Slightly Softened
  • 1 cup Powdered (Confectioners) Sugar
  • 1 whole Egg
  • 2 teaspoons Vanilla
  • 2-½ cups Flour
  • ½ cups Unsweetened Cocoa Powder
  • 1 teaspoon Salt
  • 4 ounces, weight (4 Squares) Almond Bark Or White Baking Chocolate (almond Bark Works Best And Is Cheaper)
  • Large Handful Of Red Or Green Peppermints

Preparation

Cream softened butter with powdered sugar. Add egg and vanilla and mix to combine. Add dry ingredients and mix together until dough comes together. Place plastic wrap on surface of dough and refrigerate for 2 hours.

In the meantime, unwrap candies and place them in a plastic bag. Beat with a mallet until finely crushed, leaving larger chunks if desired.

Preheat oven to 375 degrees.

Roll cookie dough in walnut-sized pieces and place on a cookie sheet. Gently press balls flat with a plain, smooth surface. Bake for 7 to 9 minutes, being careful not to burn. Cookies will remain the same general size and shape after they bake. Remove from oven and place cookies on a cooling rack. Allow them to cool completely.

Place crushed candies in bowl. Melt almond bark in the microwave. Dip cooled cookies into almond bark, coating half the cookie. Immediately sprinkle crushed peppermints over both sides of the almond bark. Gently set on parchment paper or other nonstick surface and allow to cool before serving.

I made these as part of my cookie gifts. I think the cookies, which aren’t very sweet, are the perfect foil for the sweet white chocolate and peppermint candy.

They were a big hit.

I love these cookies! I made them last year, and we all loved them. I added a little more sugar to the cookie, though. The first batch needed it. What a wonderful mix of chocolate, and the cool peppermint with creamy almond bark. Thanks Ree!

I am giving them 2 and only for looks. They’re blah. My kids tried one bite and threw them out and so did I. Unfortunately, this is the 4th dessert item I’ve made from PW and none of them have been to our liking. I’ll stick to her other recipes which are great.

I loved these cookies. And I shared them as part of my holiday treat boxes and they were a huge hit. The cookie is light, airy and just the right amount of chocolate. The melted white chocolate adds the perfect amount of sweetness and I thought the crushed starlight mints were just the right amount of accent. Perfect!

I agree with kellybelle, they are a pretty cookie but that’s about it. They’re missing something, maybe peppermint in the cookie itself??

I didn’t really care for these cookies too awfully much. They are definitely pretty… for that I give a few mittens. But I didn’t even want to eat them… Just stare at them…

I made these twice over the Christmas holiday last year- they are my new favorite cookie. The cookie itself is not overly sweet, and who can resist a chocolate-peppermint combo? I made a batch for a cookie exchange and like them so much and made more! Can’t wait for Christmas season to come around again!
