Description

Twice baked cookie.

Ingredients

  • ⅓ cups Chocolate Chips
  • ¼ cups Butter
  • 1 whole Egg
  • ½ cups Sugar
  • ½ teaspoons Vanilla
  • 1 cup Flour
  • ¼ cups Cocoa
  • ¾ teaspoons Baking Powder
  • ½ teaspoons Sea Salt

Preparation

1. Preheat oven to 375

2. Melt butter and chocolate chips

3. Cream eggs and sugar

4. Add vanilla and chocolate mixture

5. Sift in flour, cocoa, baking powder and salt

6. Shape dough into a rectangle 10×3 inches on ungreased baking sheet

7. Bake for 25 minutes, cool for 15 minutes, reduce temperature to 275

8. Cut crosswise into ½” slices, lay flat on tray, and bake for additional 15 minutes until crispy and light brown

This was my first-ever attempt at making biscotti. I think it turned out great! Except the edges of the dough got very crispy on the first baking time. Not sure how to get around that, it’s not like you can keep it from thinning out at the edges, but maybe I can try harder to work the dough into more of a block.
