One bite of these cookies and no one will believe they are healthy for you and have zucchini in them! I love a good chocolate and peppermint combo and these will not disappoint.
1. Whip butter, oil and sugars together until fluffy, 2 minutes.
2. Mix in egg, vanilla and grated zucchini.
3. Carefully mix in all dry ingredients until incorporated.
4. Scoop onto greased cookie sheet and bake 7-9 minutes at 350.
5. For the glaze, mix powdered sugar, milk and peppermint extract together in small bowl until smooth in consistency. You may need to add more milk to get your desired consistency.
6. Spread glaze over cookies and top with sprinkles.
