Description

This is my second attempt at recreating the Potbelly oatmeal chocolate chip cookie. I have to say it is pretty close.

Ingredients

  • 1 cup Margarine
  • 1 cup Brown Sugar
  • 1 cup White Sugar
  • 2  Eggs
  • 2 teaspoons Vanilla
  • 2-½ cups Quick Oats
  • 2 cups Flour
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 cups Chocolate Chips

Preparation

Preheat oven to 350 F.

In a large mixing bowl, cream margarine and sugars. Add in the eggs, one at a time, beating after each addition. Mix in vanilla. Set aside.

In a separate bowl, combine oats, flour, baking soda and salt. Mix together then slowly add this into the margarine mixture. Add about a cup at a time, mix, then add another cup. Do this until it is all blended together. Mix in chocolate chips.

Form dough into medium size balls and place on cookie sheets that you’ve covered with a Silpat. Bake for about 10 minutes. Serve!

This recipe yields about 40 cookies.

These were the best cookies that I have made in a LONG time!!!!! I made them for my students and they begged me to make more. I did add butterscotch chips and m&m’s to mine-just because I had some half bags to use up. They were chewy, soft and had really good texture. I will definitely make these again. This is my new fave recipe!
