Description

Moist and delicious pumpkin pancakes. The perfect fall breakfast.

Ingredients

  • 1-½ cup Whole Wheat Flour
  • 3 teaspoons Baking Powder
  • 2 Tablespoons Sugar
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 1-½ teaspoon Pumpkin Pie Spice
  • 1 cup Milk
  • 1 cup Pumpkin Puree
  • 1  Large Egg, Lightly Beaten
  • 2 Tablespoons Butter, Melted

Preparation

In a large batter bowl, stir together flour, baking powder, sugar, salt, cinnamon and pumpkin pie spice. Make a well in the center and add in milk, pumpkin puree, egg and butter and stir until well combined.

Preheat a large greased skillet and pour desired amount of batter. Flip pancakes when tiny pin size bubbles begin to form.

Serve warm.

Oh my goodness I made these for dinner tonight and everyone even the four kids loved them! Very filling without making you feel weighted down afterward. We will definitely be making these again.

delish! Made these this morning for my grandkids and husband, using a pumpkin from our garden last summer! What a hit they were, especially fun since the grands had helped with growing the pumpkin!

I made these for Thanksgiving breakfast, and my husband and little girl LOVED them! The batter is very thick and the pancakes are very dense, so one or two fill you up pretty quickly. I doubled the recipe and made mine about 4-6 inches in diameter, about 1/3 to 1/2 inch thick, and it made 12 pancakes. I used brown sugar, and was very pleased with the results. The flavor is reminiscent of a pumpkin pie/cookie/bread, with the perfect amount of spice and sweetness. This is my new favorite pancake recipe, and I will definitely make these again and again! Thanks for sharing this great recipe!
