Description

A overripe banana in your fridge? Make these delicious pancakes!

Ingredients

  • 1 cup Plus 2 Tablespoons Flour
  • 2 teaspoons Baking Powder
  • ¼ cups Sugar
  • ½ cups Plus 2 Tablespoons Milk
  • 1 whole Egg
  • 1 whole Banana, Thinly Sliced
  • 1 Tablespoon Butter
  • 2 whole Peaches, Thinly Sliced
  • Powdered Sugar

Preparation

Mix together flour, baking powder and sugar. Add milk and the beaten egg and mix. Add banana and mix gently.

Preheat a pan over medium heat. Melt butter. Put two peach slices cheek-by-jowl on the pan, and cover with a tablespoon of pancake mixture. Cook about 3-4 minutes on each side or until goden brown. Make about 12 pancakes like this.

Serve hot or warm, sprinkle with powdered sugar.

These were very yummy even though we accidentally used whole wheat flour. :) The peaches were all caramalized and warm and ooohh so good! Thanks for sharing this!
