Description

These low-sugar granola bars are soft and chewy rather than crispy and have a pleasing level of natural sweetness from the bananas, ground cinnamon and grated nutmeg.

Ingredients

  • 3-½ cups Oats
  • ¾ cups Roughly Chopped Pecans
  • 3 whole Large Ripe Bananas
  • ⅔ cups Unsweetened Applesauce
  • ¾ cups Dried Cranberries
  • 2 Tablespoons Ground Flax Seed (or Flax Meal)
  • ¾ teaspoons Ground Cinnamon
  • ½ teaspoons Freshly-ground Nutmeg
  • ½ teaspoons Salt

Preparation

Preheat oven to 350ºF. Line a 9- by 13-inch baking sheet with parchment paper, with about 1 inch of parchment paper overlapping the sides.

Spread out the oats and chopped pecans on a baking sheet. Place in the oven until they are lightly toasted, stirring occasionally, about 10 minutes.

In a medium bowl, mash the bananas with the back of a fork. Stir in applesauce until combined.

Transfer the oats and pecans to a large bowl and stir in dried cranberries, ground flax seed (flax meal), cinnamon, nutmeg and salt.

Stir the banana mixture into the oat mixture until well combined and starting to clump together. Transfer to the prepared baking dish and press down evenly.

Bake until the bars are golden brown and starting to separate from sides of the pan, about 30 minutes.

Let cool on a wire rack for 15 minutes. Use the parchment paper to lift the bars out of the pan. Let cool to room temperature, then cut into bars.

Serve or store in an airtight container.

mmm look delish! hopefully my denture wearing dad can have this! (whats funny is that what made him get dentures was biting into the nature valley granola bar! :D)

Yum.

I wish I could give out half stars. I think this would get a 4.5 star from me. I’ve made them twice. The first time exactly as it is written. They were yum. They were just a TAD to non-sweet for me. So the next time around I added about 1 tablespoon of honey to the banana/applesauce mix and just a touch more cinnamon. Perfect!

I’d never made granola bars before, but I’m very pleased with these! I didn’t have old-fashioned oats so I subbed quick cooking oats, and they still turned out pretty well. The flavor is great-not too sweet, and I love the pecans! Next time I think I’d add more cranberries. I took one for lunch and looked forward to it all morning :)
