Nothing looks more elegant than a fritatta on the breakfast table. This Italian-style omelette called a frittata, is a simple, delightful egg dish for brunch or a light dinner. This has minimal ingredients and is ready in under 20 minutes!
Heat oven to 400ºF.
In a large bowl, whisk together the eggs, mustard, baking powder, salt and pepper. Mix in the spinach, cheddar, and ham.
Add the olive oil to a large skillet swirl to coat. Add the egg mixture to the skillet, stir once, and transfer the skillet to oven. Cook until the eggs are set, 12 to 14 minutes.
