A gluten-free and dairy-free easy breakfast of bacon and avocado stuffed omelette.
Whisk eggs, dairy free milk and seasoning.
Heat a drizzle of olive oil in a shallow pan over a medium heat. Pour in egg mixture and move pan back and forward until base is fully coated. Cook for 2 minutes then flip and cook for a minute.
On half of the egg surface, add bacon, salsa, cheese and avocado. Fold in half and serve.
