Description

This Cinnamon Apple Pie Baked Oatmeal is filled with soft apple pieces and the perfect amount of warming spices. The ideal healthy breakfast for fall!

Ingredients

  • 2 cups Rolled Oatmeal
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Allspice
  • Pinch Of Salt
  • 2  Eggs
  • ½ cups Apple Sauce, Unsweetened
  • ¼ cups Pure Maple Syrup
  • ½ cups Nut Milk
  • 1  Large Apple, Chopped Into Cubes

Preparation

Preheat oven to 350ºF. Spray an 8×8 inch baking dish with cooking spray (or line with parchment paper) and set aside.

In a large bowl, combine dry ingredients: rolled oatmeal, baking powder, cinnamon, nutmeg, allspice, and salt.

In a smaller bowl, whisk the wet ingredients: eggs, apple sauce, maple syrup, and milk. Pour the wet ingredients into the dry and mix well. Stir in the chopped apple, reserving a few pieces to sprinkle on top if desired.

Pour the mixture into the prepared baking dish. Sprinkle remaining apple on top (if using), and bake for 35–40 minutes, until the top is golden and the oats are set.

Serve warm or at room temperature. Serve as is or topped with nut butter, yogurt, or maple syrup.
