Blueberry Baked Oatmeal is the perfect make-ahead breakfast for the week! Full of simple wholesome ingredients to fuel your day.
Preheat oven to 350ºF. Spray an 9×9 inch baking dish with cooking spray (or line with parchment paper) and set aside.
In a large bowl, combine dry ingredients: rolled oatmeal, baking powder, cinnamon, and salt.
In a smaller bowl, whisk wet ingredients: eggs, maple syrup, nut milk, vanilla, and coconut oil. Pour wet ingredients into the dry and mix well. Stir in blueberries.
Pour mixture into prepared baking dish. Bake for 35–40 minutes, until top is golden and oats are set.
Serve warm or at room temperature. Serve as is or topped with nut butter, yogurt, or maple syrup.
